WHY IT RATES: The new Québec resort is scheduled to open on December 3, 2021. — Senior Editor Codie Liermann
Club Med announced today the culinary delights offered at Club Med Québec, the brand’s newest resort, which will open on December 3, 2021. Three superb restaurants, led by seasoned Club Med Executive Chef Roberto Piccininni, provide seasonal dishes created with the best local goods available.
Chef Roberto Piccininni, who has worked at Club Med’s mountain and Exclusive Collection (5 star) properties, brings his expertise to North America. Piccininni will manage the culinary staff for the inauguration of Club Med Québec, with 19 years of culinary expertise at Club Med and seven years as an Executive Chef.
What’s Hot Right Now
Piccininni was born in Milan, Italy, and received his culinary training at Milan’s Instituto Alberghiero Amerigo Vespucci. He started his Club Med career as an entry-level chef in Cervinia in the Italian Alps shortly after, and eventually rose through the ranks at a variety of Club Med properties around Europe, China, and the Caribbean. Piccininni was named Executive Chef for the grand inauguration of Club Med Les Arcs Panorama in the French Alps in 2018 after being promoted to Chef de Cuisine at Club Med Wengen in Switzerland in 2014. Piccininni returned to Italy after this amazing achievement, taking up the role of Executive Chef at Club Med Cefalù, an Exclusive Collection facility in Sicily.
Club Med Québec will send visitors on a gourmet culinary adventure with three unique dining concepts inspired by historic Canadian and French cuisines, as part of an all-inclusive dining package. With a focus on farm-to-table eating, over 80% of the products will be sourced from inside Canada, with 27% coming from local vendors such as La Famille Migneron, La Ferme Basque de Charlevoix, and Viandes Bio de Charlevoix.
The resort’s upmarket gourmet lounge, La Chalet, provides a private and intimate setting with stunning views of the St. Lawrence River. Guests may enjoy reinterpretations of local dishes prepared using seasonal and local ingredients to excite the palate while admiring the vista. A sophisticated lounge bar, wine cellar, and boutique gourmet store are also available for customers to buy local delights to take home.
Terroir & Co. provides unforgettable dining experiences for families, such as chances for children and parents to cook and enjoy meals together. Enjoy fondues and raclettes created with local Québec cheeses and charcuteries, as well as freshly baked cookies and Québec’s famed maple taffy on the menu. The dining area’s participatory nature enables families to create lifelong memories while allowing children the opportunity to choose their own meal choices.
The resort’s main restaurant, Le Marchè, offers an extensive menu of local and foreign cuisine, as well as two terraces and five eating areas dedicated to distinct gastronomical components associated with Québec, such as hunting, fishing, agriculture, foraging, and cattle rearing. Guests may enjoy fruit, smoked salmon, cold cuts, eggs, crepes, and delectable pastries for breakfast, as well as charcuterie, hot soups, crisp veggies, and bruschetta tapenades for après-ski snacks, thanks to the buffet style. Guests will be wowed by lavish salad bars, scrumptious tapas, gourmet pasta, a variety of harvest vegetables, and the finest local meats, seafood, and delicacies served to perfection for lunch and supper. The menu will surpass expectations while delivering something for everyone, with savory dishes including coq au vin, poutine, bison bourguignon, tourtière, and beef fillet with onion truffle – in addition to plenty of vegetarian, vegan, and gluten-free alternatives.
